Seafood Dishes

Cod with sautéed greens

Ingredients

1 kilo salt cod
1 kilo wild greens
1/2 kilo spinach
2 large onions
4 cloves of garlic
1 cup olive oil
2-3 ripe tomatoes
Salt and pepper to taste

Preparation

Soak the cod overnight in water (replenish the water 2-3 times) and allow to stand in order to remove the salt prior to preparation. Then, cut into pieces. Rinse and clean the greens and spinach thoroughly. Saute the finely chopped onions and garlic in olive oil until brown. Then gradually add the greens and spinach, until they shrivel. Afterwards add the ground tomatoes with a little salt and pepper and let them boil for about 20 minutes over moderate heat. Ten minutes before the vegetable is cooked, add the cod. You can also prepare the cod without tomatoes, if you wish.
