Raw Salads - Pickles

Horiàtiki salad (serves 6)

Ingredients

  1. 4 tomatoes
  2. 1 cucumber
  3. 1 medium onion
  4. 1 green pepper
  5. 150 gr fèta cheese
  6. A few vinegar-cured black olives
  7. 1 bunch purslane/li>
  8. A little caper
  9. ½ cup EXTRA VIRGIN OLIVE OIL
  10. A shot of oregano
  11. Salt
  12. 1 teaspoon traditional vinegar

 

Preparation

Rinse the tomatoes under tap water then peel the cucumber and slice both. Chop the onion and pepper in rounds. Put everything in a salad bowl; add the olives, caper and season with oregano, salt and mix well. Slice the feta cheese and add to the salad bowl. Dress with olive oil and vinegar.
