Ingredients
2 kilos courgettes
7-8 cloves of garlic, finely chopped
4 tomatoes
Parsley
1 cup EXTRA VIRGIN OLIVE OIL
Salt and pepper
Preparation
Wash the courgettes and carve them across with a knife to tuck in the garlic. Place the courgettes neatly into a baking pan. Add in the olive oil and the grated tomatoes; sprinkle
with the dill, salt and pepper to taste, and cook in the oven for an hour. Sprinkle with parsley again.
