Greens & Vegetables

(serves 6)


  2. 500 gr dry broad beans
  3. 1 kilo bulbs
  4. 1 teaspoon oregano
  5. Salt and pepper to taste



Peel and rinse the bulbs well. Put them in cold water for 12 hours. Do the same with the broad beans in a separate bowl. Put the bulbs in a pot with a lot of fresh water and boil them for 10 minutes. Strain and dispose of the water. Add fresh water in the pot and boil the bulbs for 15 more minutes. Place the broad beans in a pot with water and boil for 10 more minutes. Strain and add fresh water to the pot. Bring it to a boil and place the broad beans in the pot and cook for 45 minutes approximately. Taste the beans and if juicy and cooked, add in the bulbs, salt, pepper and oregano. Mix with a wooden spoon; turn heat off and let the pot stand on the stovetop for 10-15 minutes. Serve the meal in EXTRA VIRGIN OLIVE OIL.
